Milk 500g, Originario Superfine rice 100g, white flour 50g, candied orange 50g, butter 25g, 3 eggs, 1 untreated orange, Grand Marnier, oil to fry, salt
Boil the milk. Pour the rice and, after 10 minutes add the butter, the salt, 25g of sugar, the flour and the grated rind of the orange. Take the rice away from the burner and let it cool. Add the yolks, the candied orange cut into little cubes, half snifter of Grand Marnier and the egg-whites whisked stiff. Heat the oil and pour some spoonful of mixture in it. Fry the fritters and let them drip on blotting paper. Serve them hot, covered with caster sugar.
